First Place Favorites


Another fun contribution! This time I got to submit my recipe for Light Cranberry Mousse in the New First Place Favorites cookbook . I found a recipe that wasn't as healthy and much higher in sugar and made my own modifications:


Light Cranberry Mousse


1 cup reduced-calorie cranberry grape juice

2 ( .3 of an ounce) boxes sugar-free raspberry flavored gelatin

1 (16 oz) can jellied cranberry sauce

4 c. fat-free whipped topping, thawed


Heat the juice to boiling in a small saucepan; remove from heat. Add gelatin, stirring constantly until dissolved; set aside. In medium bowl, beat cranberry sauce using electric mixer on high 1 minutes; add gelatin mixture and refigerate 1 1/2 hours or until thickened but not set. Using a rubber spatula, gently fold in whipped topping; spoon into parfait cups and refrigerate 4 hours or until firm. Keep refrigerated in covered container until ready to serve. Serves 10.


{For some reason I listed this as a bread serving. Not sure why. Maybe it's higher in protein than I remember!}
